Wonderfully Stuffed Potatoes Print E-mail

PotatoBaked potatoes stuffed with seasoned, low-fat cottage cheese are a lavish low-fat, low- cholesterol, low-sodium treat.

You will need:

4 med baking potatoes
.75 cup low-fat cottage cheese
.25 cup low-fat milk
2 tbsp soft margarine
1 tsp dill weed
.75 tsp herb seasoning
4-6 drops hot pepper sauce
2 tsp grated Parmesan cheese  per potoato.

Preparation instructions:

1. Prick potatoes with fork. Bake at 425º F for 60 minutes or until fork is easily inserted.
2. Cut potatoes in half lengthwise. Carefully scoop out potato leaving about 1/2 inch of pulp inside shell. Mash pulp in large bowl.
3. Mix remaining ingredients (except Parmesan). Spoon mixture into potato shells.
4. Sprinkle top with Parmesan cheese.
5. Place on baking sheet and return to oven. Bake 15-20 minutes or until tops are golden brown.

I came out for exercise, gentle exercise, and to notice the scenery and to botanise.  And no sooner do I get on that accursed machine than off I go hammer and tongs; I never look to right or left, never notice a flower, never see a view - get hot, juicy, red - like a grilled chop.  Get me on that machine and I have to go.  I go scorching along the road, and cursing aloud at myself for doing it.
