Prawn, Nectarine & Lime Salad Print E-mail

A delicious cold salad.

You will need:

500g Prawns (steamed, with added spice)
juice of 3 limes
10 cm fresh ginger (grated)
6 Nectarines (ripe)
mint leaves
100g Pistachio nuts (shelled)

Preparation instructions:

1. Take 4 nectarines and quarter them (remove pip).
2. Add prawns, quartered nectarines and ginger with limejuice.
3. Squeeze the juice from the 2 remaining nectarines over the salad, garnish with mint leaves and Pistachio nuts.
