Ostrich Steak/Fillet with Gorgonzola, Ementaler & Preserved Green Figs Print E-mail

Dinner never looked this good.

You will need:

Ostrich fillets or steak (depends on your preference)
1 tbsp olive oil
1 onion, peeled & thinly sliced
1 oz whiskey
1 quarter slice Gorgonzola cheese (per Ostrich cut)
1 quarter slice Ementaler cheese (per Ostrich cut)
1 preserved green fig (per Ostrich cut)
coarse salt & grounded black pepper (to taste)
1tsp balsamic vinegar

Preparation instructions:

1. Rub the fillet /steaks with olive oil, grinded salt and coarse black pepper.
2. Caramelize onion in remaining olive oil in skillet.
3. Add ostrich cuts & prepare rare having added the balsamic vinegar).
4. Flambé Ostrich in whiskey. Remove still rare.
5. Place cuts in ovenpan, covered with Gorgonzola and a hint of Ementaler cheese.
6. Place in pre heated oven +/-180 deg C to melt cheese evenly. The Ostrich will be med-rare.
7. Serve immediately with half cut preserved green fig (with its syrup) on top.
